AGRICULTURAL PRODUCT TECHNOLOGY STUDY PROGRAM HELD AN INTERNATIONAL GUEST LECTURE
The Department of Agricultural Product Technology, Faculty of Agriculture, Universitas Sriwijaya held an international guest lecture with the theme “Milk Biochemistry and Molecular Structure: Cheese Technology” in a hybrid manner on Wednesday, May 29, 2024, in the Seminar Room of the Faculty of Agriculture Palembang and also through the zoom meeting application. A guest lecturer presented this activity, Prof. Dr. Abderrahmane Aït Kaddour (Professor in Food Science and Technology, VetAgro Sup Institute, France).
The guest lecture activity of the Agricultural Product Technology Study Program was opened directly by the Dean of the Faculty of Agriculture Universitas Sriwijaya. It was attended by the Vice Dean for Academic Affairs, Head and Secretary of the Department of Agricultural Technology, Study Program Coordinator, lecturers, and students of Agricultural Product Technology Study Program. In his speech, the Dean of the Faculty of Agriculture (Prof. Dr. Ir. A. Muslim, M.Agr.) said that guest lectures are essential for students to add knowledge and information so that they can motivate students to keep learning and developing themselves to improve their quality of life. The Dean also appreciated the guest lecturers who had provided material for this guest lecture activity and the Agricultural Product Technology Study Program for organizing guest lecture activities.
Prof. Dr. Abderrahmane Aït Kaddour said that cheese-making is one way to preserve milk because it will reduce the water content of the milk. Also, to make the desired cheese, we need to control various factors, such as the fermentation condition, the amount of enzyme and the lactic acid bacteria used, and the characteristics of the raw milk, such as the fat, protein, mineral, and other proximate characteristics. The guest lecturer hopes that the material that has been delivered can be helpful for students of the Agricultural Product Technology Study Program.
